Happy Birthday TM.

Perhaps your roommate gave you a cast iron pan, because they hoped you would try it. Folks who use cast iron pans know that used properly, they are just as non-stick as a teflon or other chemical based non-stick surfaces. Without the teflon and aluminum impact on your food supply and ultimately your body.

My most prized cooking utensil is a cast iron pan inherited from my grandmother. She fried potatoes in that pan every day all her adult life. More than 50 yrs of fried potatoes. Before I got it, twenty years ago. It browns food more quickly and more evenly than my own purchased cast iron pans which are only 30 yrs old. Still, when I'm making a big batch of hash browns, I end up using both big cast iron pans and a teflon skillet I have.

Using the same techniques side by side, both types of pans produce optimum results. Albeit, the cast iron pans do it more quickly at a lower heat. Without introducing teflon and aluminum chemical substrate into your body.

Perhaps your room mate could have better educated you, who s/he was trying to help. Perhaps you could have been more open or inquisitive as to why your room mate bought you a cast iron pan when you use only non-stick pans.

Perhaps there is a lesson in there for all of us. Something about being open to concepts we do not yet understand. Many of which we have not yet been properly introduced to.

And no, despite the blustering protestations of some, I am not cabal.
